A no bake super rich dessert. Originally got this from best friends mom in 1977. I usually make 2 at a time for parties. Ingredients:
3 cups graham cracker crumbs |
3 1/2 sticks butter (real butter makes a difference) |
2 eggs |
1 tsp. vanilla |
2 cups confectioners sugar |
5 bananas |
lemon juice |
20 oz. (1 can) crushed pineapples - drained |
1 large tub coolwhip |
2 cups crushed walnuts (optional) |
cherries (optional) |
Directions:
1. Crust: Combine graham cracker crumbs with 1 1/2 stick of butter. Press into a 9x12 pan. Chill to set. 2. Filling: Combine 2 sticks butter, 2 eggs, vanilla and 2 cups confectioners sugar into a mixing bowl. 3. Beat for 20 minutes. A stand mixer helps here. DO NOT SKIMP ON TIME! (Your patience will be rewarded). 4. Pour into crust and even out. 5. Slice bananas and dip all slices into a small bowl of lemon juice to prevent browning. Drain and place in a layer over filling. 6. Place pineapple in a layer over the bananas. 7. Cover Pineapples with the CoolWhip. 8. Optionally, spread walnuts and cherries on top. 9. Chill at least 4 hours before eating or freezing. 10. Nutritional Info: Do NOT even think that this is low fat or low calories! |
