Nili's Tomato Barley Soup |

A warm, thick and rich...yet light and delicate tomato barely soup recipe given to me by my friend Nili. Garnish with Lemon Thyme or Basil (or both) or just go ahead and add to the pot while cooking. Also excellent garnished with mozerella or parmesean cheese. Ingredients:
3 -4 large onions |
100 g tomato paste |
800 g crushed tomatoes |
2 bay leaves |
3 -4 garlic cloves |
olive oil |
salt and pepper |
1600 -2400 g water |
1 cup barley |
1/2 cup rolled oats |
Directions:
1. Finely chop onions. 2. Sautee onions in a bit of olive oil until brown. 3. Add in bay leaves, garlic, crushed tomatoes, tomato paste, barely, rolled oats and water (just fill up the crushed tomato can with water 2-3 times and add to soup now and/or during cooking). Stir while bringing all to a boil. 4. Cover (or not! :) ) and turn down the heat to simmer for about 40 min or until the barely is soft and chewy and fully cooked. 5. Garnish with fresh lemon time, basil, grated cheese, croutons or anyway you like and serve hot, warm or even cold. 6. Enjoy! |
