Nigella's 'Back From The Pub' with Halloumi |

A vegetarian version of Nigella's 'back to the pub' recipe from 'Feast'. Ingredients:
6 oz potato |
2 oz halloumi |
1 oz peas |
1 oz cheddar cheese, grated |
1 egg, beaten |
Directions:
1. scrub the potatoes and boil for 20 minutes till softening 2. add the peas to the pan and boil for 3-5 minutes 3. beat the egg and cheese together 4. drain the potatoes and peas and wipe pan dry 5. dry fry the halloumi in the pan until browning lightly 6. add the potatoes and peas and stir well 7. add the egg and cheese and stir very quickly so the egg coats the vegetables before cooking 8. cook for 2-3 minutes 9. serve in a bowl |
