Nif's Pork & Cranberry Meatballs |

Pork and cranberries?! Yup! It's really good and you can put them on pasta or rice, or just make a meatloaf out of it instead. Enjoy! Ingredients:
2 teaspoons garlic, minced |
1 teaspoon rosemary, dried |
2 teaspoons olive oil |
1 teaspoon sea salt |
1 teaspoon pepper, freshly ground |
1 tablespoon whole grain mustard |
2 lbs lean pork, ground |
1/2 cup breadcrumbs |
3 egg whites |
2/3 cup dried cranberries, roughly chopped |
Directions:
1. Stir together garlic, rosemary, olive oil, salt and pepper. If you can make it into a paste (with a mortar and pestle or mash together with the back of a spoon), that's even better. 2. In a large bowl, combine everything with your hands. Work ingredients until the are completely mixed. Make into approximately 30 meatballs. 3. You can cook these in a nonstick pan or in the oven at 350F until cooked through, internal temperature being 160°F . The time depends on how big you make your meatballs. |
