A staple in our home. My kids and husband request this often! It goes well with spicy shrimp, Cajun-spiced halibut, or by itself with tortilla chips! Ingredients:
1 mango - peeled, seeded, and chopped |
1/2 red bell pepper, minced |
1 jalapeno pepper, seeded and minced, or to taste |
1/4 cup chopped green onion |
1 lime, zested and juiced |
1 tablespoon vinegar |
1 tablespoon olive oil |
salt and ground black pepper to taste |
Directions:
1. Stir the mango, red bell pepper, jalapeno pepper, green onion, lime zest, lime juice, vinegar, olive oil, salt and pepper together in a bowl. Refrigerate at least 30 minutes before serving. |
