A staple in our home. My kids and husband request this often! It goes well with spicy shrimp, Cajun-spiced halibut, or by itself with tortilla chips!
Ingredients:
1 mango - peeled, seeded, and chopped
1/2 red bell pepper, minced
1 jalapeno pepper, seeded and minced, or to taste
1/4 cup chopped green onion
1 lime, zested and juiced
1 tablespoon vinegar
1 tablespoon olive oil
salt and ground black pepper to taste
Directions:
1. Stir the mango, red bell pepper, jalapeno pepper, green onion, lime zest, lime juice, vinegar, olive oil, salt and pepper together in a bowl. Refrigerate at least 30 minutes before serving.
