Nicola's Blueberry Oat Protein Muffins

High protein, low fat muffins.
Ingredients:
250 g cottage cheese
100 g yoghurt
160 g oats
200 g blueberries
120 g whey protein powder
2 egg whites
1 egg yolk
2 tsp sugar
2 tsp baking powder
Directions:
1. Beat the eggs, add CREAMED cottage cheese and beat till smooth, add oats, sugar and protein powder and baking powder. Mix all ingredients and then add a little more low fat yoghurt if necessary to get a good consistency (shd drop off the spoon not run or stick).
2. Then add blueberries or fruit of choice. Bake in 200c oven for 15-20mins.
