Nicola's Blueberry Oat Protein Muffins |

High protein, low fat muffins. Ingredients:
250 g cottage cheese |
100 g yoghurt |
160 g oats |
200 g blueberries |
120 g whey protein powder |
2 egg whites |
1 egg yolk |
2 tsp sugar |
2 tsp baking powder |
Directions:
1. Beat the eggs, add CREAMED cottage cheese and beat till smooth, add oats, sugar and protein powder and baking powder. Mix all ingredients and then add a little more low fat yoghurt if necessary to get a good consistency (shd drop off the spoon not run or stick). 2. Then add blueberries or fruit of choice. Bake in 200c oven for 15-20mins. |
