                    Creamed mashed potatoes made with baked, not boiled, potatoes.  From the Graham Kerr cookbook.  Ingredients: 
                    
                        
                                                3 lbs large potatoes, scrubbed  |  
                                                1/4 cup cream  |  
                                                2 spring onions, coarsely chopped  |  
                                                2 tomatoes, diced  |  
                                                salt  |  
                                                white pepper  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Preheat oven to 350°. 2. Bake potatoes for about 1 hour, until cooked. 3. Cut each potato in half, and scoop centers into a large saucepan. Reserve potato skins for another use, if desired. 4. Blend in remaining ingredients. Heat through, stirring gently.                              |
