NEW ZEALAND RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pfeiffer Estate in Arlington, Texas in 1986.
Ingredients:
4 tablespoons butter
1 small white onion chopped
1 cup long grain rice
1-1/2 cups chicken stock
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 cup raisins
1/4 cup slivered almonds
Directions:
1. Melt 3 tablespoons butter in casserole then add onion and cook until golden.
2. Stir in raw rice and cook three minutes then add stock and season with salt and pepper.
3. Bring to boil then cover and bake at 375 for 20 minutes adding more stock if necessary.
4. Combine remaining butter; currants and almonds then pour over rice just before serving.
