4 medium sweet potatoes, cooked, peeled and sliced in halves lengthwise |
salt |
1 tablespoon cornstarch |
1/2 cup brown sugar |
1 cup orange juice |
2 tablespoons chopped walnuts |
1/2 teaspoon grated orange rind |
3 tablespoons cooking sherry |
1/4 cup margarine |
Directions:
1. Arrange potatoes in shallow baking pan or dish; sprinkle lightly with salt. 2. Combine cornstarch, brown sugar and 1/4 t salt. 3. Blend in orange juice and raisins. 4. Bring mixture quickly to a boil, stirring. 5. Add remaining ingredients and pour over potatoes. 6. Bake, uncovered, in oven preheated to 350*F 20 minutes or until potatoes are well glazed. 7. Garnish with orange slices, if desired. 8. NOTE: 1-pound 2-ounce can drained sweet pototes may be substituted for cooked potatoes. |
