New Years Appetizer Mexican Meatballs |

Got to try these! Ingredients:
2 slices firm-textured bread, torn into small pieces |
1/2 c. milk |
2 lbs. lean ground beef |
2 eggs, slightly beaten |
1 small onion, finely chopped |
3 cloves garlic, minced |
1/4 c. finely chopped fresh parsley |
1/2 t. pepper |
50 pimento-stuffed salad olives |
1t red pepper flakes |
prepared picante sauce |
Directions:
1. Soak bread in milk. Mix thoroughly beef, eggs, onion, garlic, parsley, bread mixture and pepper. Shape into 1-inch balls, placing an olive in center of each. Place in large baking pan. 2. Bake in 350' F. for 25 minutes or until done. 3. Place meatballs in saucepan. Add picante sauce and heat through. Serve with wooden picks. 4. Makes about 50. |
