Not your traditional spinach salad. Fruity and yummy. Ingredients:
dressing |
1/4 cup lemon juice |
8 t canola oil |
2 t honey |
1 tsp dijon mustard |
2 cloves garlic, peeled and minced |
1/2 tsp salt |
1 tsp black pepper |
salad |
3 cups torn spinach leaves, washed and dried |
3 cups torn red-leaf lettuce, washed and dried |
2 ripe kiwi fruit, peeled and thinly sliced |
1 can (11 ounces) mandarin oranges, drained |
1/2 cup dried cranberries (dried cherries work well also, as could raisins but as a last resort) |
1 cup red onion, thinly sliced |
6 ounces soft goat cheese, cut into six 1/2-inch thick rounds |
bread |
Directions:
1. In a small bowl, whisk together lemon juice, oil, honey, mustard, garlic, salt, and pepper. Set aside. 2. Combine spinach and lettuce in a large bowl. 3. Pour dressing over greens and toss to coat. 4. Divide greens among 6 plates and garnish each with kiwi, mandarin oranges, cranberries, red onion, and a round of goat cheese. Serve with a crusty slice of bread. 5. This salad also is great for a main course at lunchtime. |
