Salad are a great side to anything in the summertime, so why not play around with slaw? This recipe is savory, delicate and tasty...goes well with meat, poultry, fish, sandwiches... and by itself! Ingredients:
3/4 cup of shredded cabbage |
1/4 cup of shredded carrots |
1 celery stalk, sliced |
1/4 cup of hearts of palm, diced |
3 tbs of diced red onion |
2 tbs of goat cheese, crumbled |
1 tbs of shaved parmesan cheese |
1 tbs of mayonnaise |
1 small squirt of mustard |
salt and pepper to taste |

1/2 of an avocado, cubed |
1/4 of an apple, diced. |
Directions:
1. Mix all of the ingredients, except for mayonnaise, mustard, salt and pepper. 2. Add mayonnaise, mustard, salt and pepper after mixing... and enjoy! 3. One serving = about 190 calories (without avocado and apple) 4. One serving = about 300 calories (WITH avocado and apple) |
