New Red Potato And Green Bean Salad |

This is a great potato salad to take to those summer cookouts - not only is it unique and flavorful, but uses not mayo. Always a big hit. Ingredients:
1 pound green beans, snapped |
2 pounds red potatoes, halved |
1 cup red bell pepper, diced |
1/2 cup red onion, minced |
2 teaspoons garlic, minced |
3 tablespoons dill |
1 teaspoon sugar |
1 tablespoon dijon mustard |
4 tablespoons balsamic vinegar |
1/2 cup salad oil |
salt and pepper to taste |
8 pieces thick cut peppered bacon, fried crispy and rough chopped |
Directions:
1. Cook green beans in boiling, salted water until tender-crisp, approximately 5 minutes. 2. Drain and cool with cold water. 3. Cook potatoes until fork tender. 4. Cool and place in bowl with beans and peppers. 5. Whisk together remaining ingredients and pour over vegetables. 6. Toss gently and refrigerate for 1 hour. 7. Stir bacon crumbles in just before serving, so they will remain crispy |
