2 lbs new potatoes, unpeeled |
3 tablespoons white wine vinegar |
1 tablespoon lemon juice |
2 teaspoons dijon mustard |
1 shallot, minced |
6 scallions, white part only, chopped (reserve tops for garnish) |
2 tablespoons chopped lemon thyme |
1/4 cup chopped parsley |
3 tablespoons vegetable oil |
3 tablespoons olive oil |
salt & freshly ground black pepper |
paprika |
sliced scallion top |
Directions:
1. Steam or cook potatoes until just tender. 2. Cool slightly and slice into quarters or chunks, and place in a serving bowl. 3. Combine dressing ingredients, whisking in oils gradually until thoroughly blended. 4. Pour dressing over warm potatoes, tossing gently until combined. 5. Sprinkle potatoes with paprika and scallion tops. |
