New Potatoes With Coriander Seeds And Wine |

These are so good. I have been making this for years. I got this recipe from my Aunt Maggie who was an incredible cook and entertainer. Greatness all the way around. Enjoy Ingredients:
3 pounds waxy new potatoes |
1/3 cup olive oil |
1 tablespoon coriander seeds coarsely crushed |
1/2 teaspoon salt |
2/3 cup sweet red wine |
2/3 cup dry white wine |
3 tablespoons chopped fresh cilantro |
1 teaspoon freshly ground black pepper |
Directions:
1. Soak potatoes in cold water for 15 minutes then scrub well to clean and remove most of the skin. 2. Dry with paper towels. 3. In large deep skillet with a lid heat oil. 4. Add only as many potatoes as will fit in a single layer without crowding. 5. Cover and cook over medium 10 minutes then turn potatoes then recover and cook 6 minutes. 6. With a slotted spoon transfer potatoes to a plate and cook the next batch then set skillet aside. 7. Place each potato on a cutting board and press with side of a large knife just until potato cracks. 8. Return all potatoes to the skillet then set over high heat and add coriander seeds and salt. 9. When potatoes begin to sizzle add wine but be careful because it will bubble vigorously. 10. Cover then reduce heat to medium and cook three minutes more. 11. Toss or stir well then reduce heat to low and cover and simmer 12 minutes more. 12. Add cilantro and pepper then serve immediately. |
