New Potato Salad With Vegetables |

Colorful, easy to make, a great flavor combination with the tarragon white wine vinegar. This potato salad is a nice change from the usual! Ingredients:

6 new red potatoes, unpeeled, cut into eighths |
1 cup fresh green beans, cut into two inch pieces |
1/2 red bell pepper, cut into strips |
1/2 chopped yellow summer squash |
2 small shallots, finely chopped |

dressing |
2 tablespoons tarragon white wine vinegar |
1/2 teaspoon dijon mustard |
1/4 teaspoon salt |
1/4 teaspoon coarse ground black pepper |
1/4 cup olive or vegetable oil |
Directions:
1. Place potatoes in medium pan. Add enough water to cover by 2 inches. 2. Bring to a boil; cook 8 to 10 minutes or until just fork tender, adding green beans during last 5 minutes of cooking time. 3. Drain potatoes and green beans; rinse with cold water until cool. In large bowl, combine cooked potatoes and beans with remaining salad ingredients. 4. In small bowl, combine vinegar, mustard, salt and pepper. With a wire wisk, slowly beat in oil. Pour dressing over salad; toss gently to mix. 5. Chill completely |
