Ingredients:
3 pounds new potatoes, cooked |
4 eggs, hard-boiled and sliced |
3 tablespoons coarse-grain mustard |
1 red onion |
4 tomatoes, peeled, seeded, diced |
1/4 cup chopped celery |
1 tablespoon chili powder |
1/2 cup olive oil |
3 ears corn, roasted and shucked |
1 poblano chili, minced |
Directions:
1. In a large bowl blend all ingredients. Season with salt and fresh cracked pepper. Garnish with chopped parsley if desired |
