This is an awesome deviation from the old standard potato salad. Ingredients:
2 lbs new potatoes |
1/2 fennel bulb (sliced) |
1 tomato (chopped) |
1 red bell pepper (chopped) |
1 jalapeno pepper (chopped) |
16 ounces sour cream |
salt and pepper |
Directions:
1. Cover potatoes with water and bring to a boil. 2. Reduce heat, add salt and pepper and simmer potatoes for 15 minutes or until tender. 3. Mix red bell pepper, jalapeno and tomato. 4. Rinse potatoes with cold water and quarter. 5. Mix fennel, bell pepper, jalapeno, tomato and potato in a bowl with sour cream and chill for 1 hour before serving. |
