New Potato & Blue Cheese Pie |

Potatoes & blue cheese, great combination. A very easy & delicoius side dish...or a main dish with a nice green leafy salad!!! Ingredients:
6 red potatoes (about 2 lbs), unpeeled, sliced |
1/2 cup blue cheese, crumbled |
1/2 cup low sodium chicken broth (homemade even better or vegetable broth) |
salt & pepper to taste |
Directions:
1. Preheat oven to 350 degrees. In a 10 inch deep dish pie plate, coat lightly with cooking spray. Arrange half of the potato slices. Season with salt & pepper. Sprinkle cheese over potatoes. Add the rest of the potato slices, season. Pour stock around the edge. 2. Cover tightly with foil, and bake until potatoes are tender, about 35 minutes. Remove and bake for about another 10 minutes, until browned. |
