New Potato and Roasted Pepper Salad |

The peppers and mozzarella add a mediterranean twist to potato salad. Ingredients:
1 lb new potato, halved |
6 tablespoons olive oil |
1/2 lemon, juice |
1 tablespoon whole grain mustard |
1 pinch salt and pepper |
10 ounces mozzarella cheese, torn into pieces |
6 1/2 ounces baby spinach |
7 ounces roasted red peppers packed in oil, drained and torn into pieces |
10 basil leaves |
Directions:
1. Boil the potatoes for 10-15 mins until tender, then drain. 2. Make the dressing by whisking together the oil, lemon juice, mustard and salt and pepper. 3. Put all the other ingredients including the warm potatoes in a large bowl. 4. Drizzle over the dressing, lightly toss and serve at once. |
