Ingredients:
2.5 tspn creole seasoning |
1/4 cup diced fresh tomatoes |
3/4 cup diced red onions |
1/4 cup garlic butter |
1 juice from 1 lemon |
1.5 ib large shrimp |
16 oz light red kidney beans |
10 sprig parsley |
1 pkg brown rice |
1/2 cup white cooking wine |
Directions:
1. Finely chop parsley. Peel and devein shrimp if needed. Cook onions and butter over med/high heat in large saute pan until tender. sprinkle seasoning over shrimp. Add shrimp, tomatoes, and parsley to onions; squeeze juice over shrimp. Cook 2 minutes. Add wine. Cook 5 minutes more. Serve over rice and beans. |
