beans Ingredients:
273 g kidney beans |
400 ml water |
82 g chopped onion |
57 g chopped celery |
7/10 g (2) fresh bay leaves |
36 g chopped green pepper |
1 teaspoon chopped garlic |
1 teaspoon chopped parsley |
3/4 teaspoon dried thyme, crushed |
1 tsp fajita seasoning |
1 stock cube |
Directions:
1. In a large pot combine beans, water, onion, celery, and bay leaves. Bring to a boil; reduce heat. 2. Cover and cook over low heat for about 1-1/2 hours or until beans are tender. Stir. Mash beans against side of pan. 3. Add green pepper, garlic, parsley, thyme, salt, and black pepper. 4. Cook, uncovered, over low heat until creamy, about 30 minutes. Remove bay leaves. |
