Was at a friends house the first time I had this and it is great...Couldn't leave without the recipe. Serve with tortilla chips Ingredients:
olive oil |
1 onion, chopped |
1 14.5 oz. can diced tomatoes |
1 4 oz. can green chilies, drained |
1 10 oz. pkg. frozen spinach, thawed and drained |
1 8 oz. pkg. cream cheese, softened |
1 cup half & half |
1 1/2 cups mexican blend or monterey jack cheese |
1 tbls. red wine vinegar |
2 tbls. sour cream |
salt and pepper to taste |
Directions:
1. Preheat oven to 400 2. In pan, heat olive oil and saute onion until tender 3. Add tomatoes and chilies and then cook a minute or so 4. In large mixing bowl, add all ingredients and stir until blended completely 5. Put mixture in an 8x8 baking dish 6. Bake 35 minutes or so |
