This is just one of many recipes for Green Chile Stew here in NM. I have made it so many times, that I just wing it. Feel free to experiment or make changes. I'm making it this way right now so thought I would share. Read more . We can get the chile hot or mild. Sometimes I use half and half if somebody does not or cannot eat it hot. Serve with fresh tortillas. Ingredients:
2 pounds chile-grind beef |
1 huge onion, chopped |
2 cloves garlic, minced |
2 pounds chopped, frozen green chile (i use hot) |
2 cans diced tomatoes, chopped fine in cuisinart |
1 quart chicken stock |
2 large potatoes (red works best), cubed |
2 tsp. powdered red chile |
1 tsp. powdered cumin |
kosher salt to taste |
Directions:
1. Saute onions and garlic in large pot. Add beef, cover and steam for 30 min. Add green chile and steam until thawed 2. Add rest of ingredients and simmer for an hour or more. |
