2 cups zucchini, shredded, drained |
1/2 cup mayonnaise |
1/4 cup parmesan cheese, grated |
2 garlic cloves, diced (optional) |
1 onion, diced (optional) |
salt |
pepper |
1 loaf italian bread, day old |
Directions:
1. Mix all ingredients except for the bread and refrigerate until chilled and you are ready to bake it. 2. Preheat oven to 350 degrees F. 3. Slice the bread and place in an 8 X 8 inch baking dish. 4. Put the chilled zucchini mixture over the bread and bake uncovered for 20 minutes. |
