This will fill up a family. Hearty, Rich, Mellow.... You can use ham instead of bacon if you wish. Add some catsup if you like more tomato flavor. Ingredients:
3 large potatoes, cut into 1 cubes |
1 pound navy beans, soaked overnight |
2 - 14.5 oz cans whole tomatoes, cut into 2 cubes |
1/2 medium onion, chopped |
2 cloves garlic, chopped |
1/4 pound bacon, cut in 1 pieces |
salt & pepper to taste |
Directions:
1. Soak beans overnight in water. Drain and rinse the next morning. 2. Peel potatoes and cut into 2 inch cubes. 3. Place beans and bacon pieces in a large pot with enough water to cover them. Bring to a boil. Turn down to simmer. Don't let the beans run dry. 4. Add onion, tomatoes (cut up) and garlic. Simmer until beans are tender. 5. Add potatoes and cook until they are fork tender. 6. Ladle into bowls with piece of bread or crackers on the side. |
