A fun twist on the usual yam recipes. Ingredients:
1 (20 ounce) can pineapple slices |
1 (17 ounce) can yams, drained |
1/4 cup flour |
3 tablespoons brown sugar |
1/2 teaspoon cinnamon |
1/8 teaspoon salt |
3 tablespoons butter |
1/4 cup nuts, chopped |
1 cup miniature marshmallow |
Directions:
1. Drain pineapple slices, reserving 1/2 c liquid. 2. Line sides of baking dish with pineapple and put yams in the center. 3. Combine flour, brown sugar, cinnamon and salt; cut in butter until mixture resembles coarse crumbs. Stir in nuts. 4. Pour reserved pineapple liquid over yams. Sprinkle with flour mixture. Bake at 350°F for 25 minutes. Top with marshmallows and then broil until lightly brown. |
