New England Vegetable Chowder |

Chowder is my favorite type of soup and this one seems like a good one. Ingredients:
1/4 cup butter |
1 small onion, chopped |
1 green pepper, chopped |
1 cup celery, diced |
1 cup carrot, diced |
1 1/2 cups corn |
1 cup green cabbage, grated |
1 cup peas |
1/2 teaspoon salt |
1/8 teaspoon pepper |
2 tablespoons parsley, chopped |
4 cups milk |
american cheese, grated |
Directions:
1. Melt butter in a heavy kettle. 2. Add onion, green pepper and celery. 3. Saute until limp. 4. Add the rest of the vegetables and seasonings. 5. Add enough water to cover. 6. Cook 1 hour. 7. Stir in milk and parsley. 8. Ladle into soup bowls. 9. Sprinkle with cheese. |
