This is may favorite when I go home to R.I.! Simple and oh so good! Ingredients:
4 hot dog buns (new england style center slit) |
2 cups precooked lobster meat (chopped and chilled) |
1 dash lemon juice |
2 tablespoons mayonnaise |
1/8 cup chopped onion |
1/2 cup celery (diced) |
Directions:
1. In a medium bowl, mix the lobster, lemon juice mayonnaise, onion and celery. 2. Cover and chill until ready to use. 3. Fill the rolls (toasted or un-toasted) with the lobster mixture. |
