A savory little mouthful from the New England chapter of the United States Regional cookbook, Culinary Arts Institute of Chicago, 1947. Cooking time approximate. Ingredients:
1 cup flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
1/4 teaspoon paprika |
1/4 teaspoon dry mustard (coleman's preferred) |
2 eggs, separated |
1/2 cup milk |
1 cup american cheese, grated |
oil or fat, for frying |
Directions:
1. Sift first five ingredients together. 2. Beat yolks and add to milk. 3. Stir into dry ingredients and mix well; add cheese. 4. Beat whites until stiff and fold into batter. 5. Preheat fat or oil to 360F in a large skillet. 6. Drop batter by spoonfuls into hot fat and cook until golden brown. 7. Drain on paper towels before serving. |
