New England Baked Cod in Cheese Sauce |

This recipe is easy but tasty. Serve with a rice and a veg. Ingredients:
1 1/2 lbs cod |
2 tablespoons butter |
1/2 cup chopped onion |
2 tablespoons flour |
1 cup light cream |
3/4 cup grated sharp cheddar cheese or 3/4 cup monterey jack cheese |
Directions:
1. Grease a pyrex baking dish. Preheat oven to 350 degrees. 2. In a skillet, melt the butter. Add the onion and simmer a minute or two. Stir in the flour. Using a whisk, pour in the cream or half and half slowly. Simmer a minute. Add the cheese and stir. 3. Place fish in dish and pour sauce over. 4. Bake till bubbly. Brown top under broiler if necessary. |
