2 1/2 lbs small waxy potatoes |
1 teaspoon salt |
1/3 cup chopped fresh mint |
1/4 cup chopped fresh chives |
1/4 butter |
salt and pepper |
Directions:
1. Place potatoes in saucepan. Add boiling water and bring to a boil over high heat. 2. Reduce heat to medium, cover and cook until potatoes are tender all the way through, 15-20 minutes. 3. Drain potatoes. Wipe pot clean and return potatoes to saucepan over low heat. 4. Crush potatoes with a fork against the sides of the pan. Mash in mint, chives and butter until potatoes are crushed into uniform pieces. 5. Season to taste with salt and pepper. |
