This was adapted from a Good Housekeeping cookbook. Ingredients:
4 (1/4 lb) boneless skinless chicken breast |
1/2 cup reduced-sodium chicken broth |
2 tablespoons balsamic vinegar |
1/8 teaspoon black pepper |
4 slices cooked ham, thin (about 2oz) |
4 slices part-skim mozzarella cheese, thin (about 2 oz, i use fat free) |
salad greens, of choice |
cooking spray |
Directions:
1. Spray a nonstick skillet with cooking spray and heat over med-med high heat. 2. Add chicken and cook for 6 minutes. 3. Turn and cook another 6 minutes or until no longer pink. 4. Stir in broth, vinegar, and pepper and let cook for a minute. 5. Remove skillet from heat and top each with a ham slice, then a cheese slice. 6. Cover and let cheese melt, about 3 minutes. 7. Serve with your favorite salad greens or baby spinach. 8. The sauce makes a light dressing. |
