Never-The-Same-Twice Meatloaf |

Every time you make this recipe, use a different chutney and/or a different barbecue sauce. The possibilities are almost endless! Ingredients:
1/2 lb lean ground beef |
1/2 lb ground pork or 1/2 lb ground veal |
1 onion, chopped |
salt and pepper, to taste |
1 jar homemade or prepared chutney |
2 slices hearty white bread |
1/2 cup homemade or prepared barbecue sauce |
Directions:
1. Soak slices of bread in chutney until soft and combine with remaining ingredients. 2. Mix well, and place in a meatloaf pan. 3. Bake at 350°F for 45 minutes. 4. Remove from oven and, with the back of a teaspoon, make a shallow ôtrenchö, lengthwise, on top of the meatloaf, and fill the 'trench' with barbecue sauce. 5. Return to the oven and bake for another 15 minutes. |
