Never Fail (Homemade) Noodles |

This is the homemade noodles Mom always made when I was growing up. For our family she had to double this. Ingredients:
2 egg yolks |
1 teaspoon shortening |
1/4 teaspoon salt |
2 tablespoons cream (or half & half) |
1/4 teaspoon baking powder |
1/2 cup flour, approximately |
Directions:
1. Mix well and add enough sifted flour to make a soft dough that doesn't stick when you roll it out. 2. Roll very thin. 3. Dust with flour. 4. Roll up and cut into noodles. 5. Unroll cut noodles. 6. Sprinkle a little flour over noodles before putting them into broth to cook. 7. or. 8. Spread (or hang on noodle dryer) out to dry; store in air tight container. 9. Check for doneness by testing a noodle to see if the center is cooked completely through. There should be no dryness in the center of the noodles. |
