Neiman Marcus Red Onion Marmalade

This recipe is used as a condiment on Neiman's Portobello Mushroom Sandwich. It's good on other sandwiches and a filler for omelets. The marmalsde should be allowed to stand in the refrigerator for a few days for the flavors to develop.
Ingredients:
6 cups red onions, thinly sliced
1/4 cup balsamic vinegar
1 tablespoon honey
1/4 teaspoon kosher salt
1/8 teaspoon pepper
Directions:
1. Place the onions in a heavy-bottomed saucepan and add the vinegar, honey, salt and pepper.
2. Bring to a simmer over medium heat and continue to simmer for about 15 minutes, stirring frequently, until the liquid has evaporated.
3. Remove the pan from the heat and let cool.
4. Transfer the cooled onion mixture to an airtight container and store in the refrigerator.
5. It keeps about a week.
