My dad helps his neighbor with mowing the lawn and she repays him with garden veggies, homemade jams and such. This time she gave him a big bowl of potato soup (after the first bowl he went and asked for more.:)~) He asked her for the recipe for me and this is it. Read more . Made it today and worked out the details...Good stuff!
Ingredients:
5 lbs peeled and diced potatoes
1 stick butter
1 large yellow onion
2 cups milk
8 oz sour cream
1 can cream of celery soup
1 can cream of chicken soup
1 lb cubed velveeta
1 8 oz pkg chopped ham pieces or cooked bacon
Directions:
1. In large pot melt butter, cook onions about 5 mins til soft.
2. Add potatoes and enough water to cover. Boil until fork tender.
3. Drain 1/2 water.
4. Add milk, sour cream, soups, Velveeta, ham or bacon.
5. Cook till yummy, about 20 min.
6. Good with crusty bread.
