I came up with this recipe when my children were small. It's a healthy snack to pack for lunch or anytime. Even my pickiest eater loves them. Ingredients:
1 cup all-purpose flour |
1 cup quick cooking oats |
1/2 teaspoon baking soda |
1/2 cup butter, softened |
1/4 cup white sugar |
1/2 cup packed brown sugar |
1 egg |
1/2 cup peanut butter |
1/4 cup milk |
1/2 teaspoon vanilla extract |
1 1/4 cups any flavor fruit jam |
1/2 cup all-purpose flour |
1/2 cup quick cooking oats |
1/4 cup packed brown sugar |
1/8 teaspoon baking soda |
3 tablespoons butter, softened |
Directions:
1. Beat 1/2 cup butter or margarine until smooth. Add 1/4 cup white sugar and 1/2 cup brown sugar and beat well. Add egg, milk, peanut butter and vanilla and beat well. Stir in 1 cup flour, 1 cup oats, and 1/2 teaspoon baking soda. 2. Spread in a greased 13 x 9 inch pan. Spread preserves all over top. Sprinkle with crumb topping. 3. To Make Topping: Mix together 1/2 cup flour, 1/2 cup quick oats, 1/4 cup brown sugar, 1/8 teaspoon baking soda, and 3 tablespoons softened butter or margarine until crumbly. Sprinkle over the top of the preserves. 4. Bake at 350 degrees F (175 degrees C) for 18 - 20 minutes. |
