NECTARINE PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Delaney Estate in Waco, Texas in 1994. Ingredients:
1/2 cup whole wheat flour |
1/2 cup all purpose flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 egg |
2 tablespoons unsalted butter melted |
3 tablespoons brown sugar |
1-1 /2 cups milk |
2 fresh nectarines |
Directions:
1. In mixing bowl sift dry ingredients. 2. In separate bowl combine all other ingredients except nectarines using a whisk. 3. Combine dry and wet ingredients then allow to rest 2 hours then heat griddle. 4. In the meantime slice nectarines thinly then spoon pancake mixture onto griddle. 5. Add sliced nectarines then flip once. |
