Top sliced fresh nectarines with a blueberry muffin batter and bake for a golden fruit-filled cobbler crust. Top this homestyle dessert with a scoop of vanilla ice cream. Ingredients:
4 pounds nectarines, peeled and sliced |
3/4 cup sugar |
2 tablespoons all-purpose flour |
1/4 cup butter |
blueberry muffin batter |
vanilla ice cream |
Directions:
1. Toss together first 3 ingredients in a large bowl. 2. Melt butter in a large skillet over medium-high heat. Add nectarine mixture to skillet; bring to a boil, and cook, stirring often, 5 minutes. Spoon hot nectarine mixture into a lightly greased 13- x 9-inch baking dish. Spoon Blueberry Muffin Batter evenly over hot nectarine mixture. 3. Bake at 400° for 25 minutes or until crust is golden brown. Serve with vanilla ice cream. |
