This is a recipe I obtained from the Jenkins Estate when I purchased the family collection at an estate sale in McKinney, Texas in 1997. Ingredients:
5 cups nectarines sliced |
1 cup granulated sugar |
2 egg yolks beaten |
1 teaspoon cinnamon |
1 cup flour |
1-1/4 teaspoons baking powder |
6 tablespoons granulated sugar |
1/4 teaspoon salt |
6 tablespoons butter |
1/2 cup milk |
2 egg whites beaten stiff |
Directions:
1. Toss fruit with sugar then stir in yolks and turn into buttered pan and sprinkle with cinnamon. 2. Combine flour, baking powder, sugar and salt then toss lightly to mix. 3. With a pastry blender cut butter into dry ingredients until crumbly. 4. Add milk stirring until smooth then lightly fold in egg whites and spoon over fruit. 5. Bake at 350 for 30 minutes then serve warm with ice cream or whipped topping. |
