Nectarine Chutney and Broiled Pork |

This chutney also goes nicely with chicken. Ingredients:
1 lb nectarine, pitted and chopped |
1 onion, chopped |
3 slices ginger, minced |
2 tablespoons lemon juice |
1 pinch lemon, zest of |
1 tablespoon orange juice concentrate |
1 tablespoon cider vinegar |
2 tablespoons brown sugar |
1 1/2 teaspoons cinnamon |
1 1/2 tablespoons olive oil |
3 slices ginger, minced |
1 1/2 teaspoons cinnamon |
1/4 teaspoon black pepper |
4 boneless pork chops |
Directions:
1. Combine the nectarines, onion, ginger, lemon juice and zest, concentrate, vinegar, sugar, and cinnamon in a small saucepan. 2. Bring to a boil and simmer, covered, about 15 minutes, stirring occasionally, until the mixture is thickened. 3. Meanwhile, combine the oil, ginger, cinnamon, and pepper. 4. Brush the chops with 1/2 of the mixture and broil 4 minutes. 5. Turn the chops, rebaste with the remaining oil, and broil another 4 minutes or until cooked. 6. Serve chops with chutney. |
