Nearly Vegetarian Rice Paper Rolls

This was made for lunches while watching the calories and staying away from the burger joints
Ingredients:
10 rice paper rolls
5 cm length cucumbers, washed, deseeded and sliced super fine
1/2 a medium carrot, peeled and finely grated
3 spring onions, sliced on the bias finely
1/2 a red capsicum
1 tablespoon thai sweet chili sauce
100 g cooked and shredded chicken
2 tablespoons thai sweet chili sauce
1 teaspoon strong soy sauce
Directions:
1. Combine all but the last two ingredients in a bowl.
2. Prepared the rice paper rolls as per instructions.
3. Roll into small parcels and dip in the sauce made of the lsat two ingredients.
