I came up with this after watching someone make a garbanzo bean salad. I don't care much for them except as hummus or felafel(and I am crazy about both of these foods), so I wanted to make something that I thought would work. Ingredients:
1 16oz can of navy beans |
1/4 cup onion |
1 stalk of celery |
1/2 red bell pepper |
2 tbsp olive oil |
1 tbsp vinegar |
salt and pepper to taste |
parley to garnish |
Directions:
1. Cut the vegetables the way you like. I like them finely diced. 2. Drain and rinse the beans. 3. Put them with the vegetables in a bowl and mix thoroughly. 4. Add the olive oil and vinegar with some salt and pepper and mix again. Add some parley. Put in the fridge for a while or serve immediately. It is great with barbeque. |
