Indulge in this naturally low-fat chocolate fudge cake without the guilt. You can even go up for seconds!!! Ingredients:
85 g dark chocolate, chopped finely |
1/2 cup cocoa powder |
1 cup brown sugar, firmly packed |
1/2 cup boiling water |
2 egg yolks |
1/4 cup almond meal |
1/3 cup whole wheat flour |
4 egg whites |
Directions:
1. pre-heat oven to moderate. 2. line base and side of deep 20cm round cake pan. 3. combine chocolate, cocoa and sugar with the water in a large bowl. 4. stir until smooth. 5. add egg yolks, whisk to combine. 6. fold in almond meal and flour. 7. beat egg whites in a small bowl with an electric mixer until peaks form. 8. gently fold egg white mixture into chocolate mixture, in 2 batches. 9. pour into prepared pan. 10. bake in moderate oven about 40 minutes. 11. stand in pan 5 minutes. 12. turn onto wire rack, remove paper. 13. serve warm with icing sugar and dotted with fresh strawerries, also divine cold. |
