An easy to prepare salad I like to make during the summer with home grown tomatoes,
Ingredients:
4 tomatoes, cut in half, then sliced
2 shallots, finely chopped
1 tbsp fresh parsley, chopped
2-3 hard boiled eggs, chopped
2 tbsp wine vinegar (sometimes i like to use balsamic vinegar)
3 tbsp extra virgin oil
1/2 lemon, juiced (optional)
salt & pepper to taste
Directions:
1. Place tomatoes, shallots eggs & parsley in a bowl. Sprinkle with vinegar, oil & lemon juice. Season with salt & pepper to taste, Toss & serve.
