Colorful grits! This is a perfect compliment for the laden table. Also delicious by itself as a main dish. Great with baked chicken. Ingredients:
1-1/2 cups finely chopped, cooked smoked ham |
2 small green peppers, chopped fine |
2 medium onions, chopped fine |
7-8 roma tomatoes, (or vine ripened) or 1 *large* can tomatoes |
1 pound bacon-fried crisp and crumbled |

Directions:
1. In skillet, fry bacon and put aside 2. Leave 2 tablespoons bacon grease in pan 3. Saute onions and peppers in bacon grease until soft 4. Add ham and stir 5. Saute on *low* heat for 20 minutes 6. Chop tomatoes 7. Add tomatoes and simmer for about 1 hour 8. Meanwhile crumble bacon 9. In separate pan cook about 2 cups grits according to directions 10. When grits are cooked, *May* add a little butter to grits, and stir ham mixture into grits 11. Pepper to taste 12. *May* add a little hot sauce 13. Pour into dish 14. Serve hot with bacon crumbled on top 15. Serves 10 |
