Ingredients:
1 cup sugar |
1 tablespoon all-purpose flour |
4 eggs, beaten |
1 cup light corn syrup |
1 tablespoon grated lemon rind |
3 tablespoons lemon juice |
1 tablespoon plus 1 teaspoon butter or margarine, melted |
1 unbaked (9-inch) pastry shell |
whipped cream (optional) |
grated lemon rind (optional) |
Directions:
1. Combine sugar and flour in a medium mixing bowl; add eggs, syrup, 1 tablespoon lemon rind, juice, and butter, mixing well. 2. Pour filling into pastry shell. Bake at 375° for 10 minutes. Reduce temperature to 350°; bake 45 minutes. Cool to room temperature. Garnish with whipped cream and sprinkle with lemon rind before serving, if desired. |
