Adapted from _More Home Cooking, A Writer Returns to the Kitchen_ by Laurie Colwin. Ingredients:
2 cups chopped cranberries |
1/2 cup chopped walnuts |
1 1/2 cups sugar, divided |
2 eggs |
3/4 cup melted butter (1 1/2 sticks) |
1 cup flour |
1 teaspoon almond extract |
Directions:
1. Combine cranberries, walnuts and 1/2 c sugar. Spread evenly into a 10 pie plate or springform pan. 2. Combine remaining sugar with remaining ingredients; beat until smooth. Pour over cranberries and walnuts in pie plate. 3. Bake in preheated 350F oven for 40 minutes. |
