This is an old family recipe from my father's mother who was a naturalized US citizen (originally from Nova Scotia, Canada). Works well with a simple sugar glaze or a warm white sauce over top. Ingredients:
2 cups sugar |
4 eggs |
1 cup crisco shortening |
2 teaspoons vanilla or 2 teaspoons lemon extract |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/8 teaspoon salt (a pinch!) |
1 cup milk |
3 cups flour |
1 cup ground walnuts |
Directions:
1. Mix sugar, eggs, shortening and extract until well blended. 2. Sift together dry ingredients and add, alternating with milk, until incorporated. 3. Add walnuts and mix. 4. Pour batter into a large, lightly greased tube pan. 5. Bake at 350 degrees for 1 hour. Test center with toothpick. If not clean, return cake to oven for an additional 10 minutes. |
